Happy fall you guys!! Where has the year gone already?! I know everyone is thinking the same…didn’t we just welcome spring?? I have mixed feelings about fall’s arrival…first of all it means my baby will be turning ONE next month…WHAT?!!! NO!! You can’t be growing so fast my darling boy!! *sobs* …also, winter is right around the corner *ugh* BUT on the other hand I gladly welcome fall because I mean….it’s just a GORGEOUS time of year! And by far it’s my favorite season! The weather is absolutely amazing… and the trees…my absolute favorite hues of color shine in the fall! Here in central Pennsylvania, with its loads of trees, it’s even more gorgeous than back home…so that’s a PA perk 😉 Also I’m gonna be completely honest and show just how cliche and unoriginal I am, but guys, I’m a sweater weather -pumpkin spice latte- leggings -corn mazin’- hay wagon riding-kinda girl….and I’m completely unashamed about it…so bring on the fall baby!!
I have a recipe that I’ve been wanting to share for awhile and I’m so excited to share it with you now!! It’s a healthy version of my all-time favorite muffin. Mississippi Spice muffins anyone?? If you haven’t heard of these melt-in-your-mouth spice bombs, let me just introduce you to them in all their cinnamon-y, spice-y goodness! These could be a fall specialty, or if you’re like me, you’ll make them year ’round cause they’re just that good!
So without further adue, let’s get to that recipe!! First just to make it clear, this is NOT the original recipe…I’m not even sure where to find it as I had my mom’s handwritten recipe card for the longest time. From there I modified it and now all I have is my version…but in my humble opinion, this recipe is JUST as good as the original, if not better because….da da da da….IT’S GUILT FREE!! Yes, you can eat as many as you want for breakfast, lunch, dinner, snack, dessert….whenever you feel like it! ;D….ok, so everything in moderation but sometimes moderation goes out the window when it’s just that good….hehe ok back to the recipe…for real this time!
Healthy Spice Muffins
- 1 c. butter, melted
- 2 eggs
- 3/4 c. Pyure*
- 1/4 c. pure honey
- 2 c. hot unsweetened applesauce
- 3 c. sprouted whole wheat flour (preferably organic)*
- 3 tsp. cinnamon
- 2 tsp. allspice
- 1 tsp. cloves
- 1/2 tsp. salt
- 2 tsp. baking soda
Instructions: Warm applesauce and mix with melted butter, let cool than add eggs to mixture. Add in pyure (or natural sweetener of choice) and honey, mix well. Mix in the spices, salt and baking soda. Finally, add the sprouted flour. Dip large spoonfuls (about 1/4 c.) into greased muffin tin and bake at 350* for 15-20 minutes. Let cool. Enjoy melt-in-your-mouth deliciousness!!
*Pyure is a natural brand of stevia mixed with erythritol. You can find it at Walmart.
*Sprouted flour has been shown to be a much healthier option than simply whole wheat flour as the grains are allowed to sprout before being ground into flour. Sprouting allows for more starch to be broken down as well as phytate, which is a phytic acid found in plant seeds. Breaking down these allows for easier digestion as well as more nutrients and vitamins to be absorbed by the body. Please do your own research to decide which flour is best for you. This is just one I’ve chosen for myself.
